With a rich heritage in butchery, the Despi Group sought to disrupt the fast-casual dining landscape with a bold new concept. Altavia needed to create a restaurant that honors Despi’s legacy in high-quality meat while standing out in a crowded secto— integrating an innovative culinary experience with digital convenience and a unique atmosphere. The vision was clear: an industrial-chic setting where customers could enjoy premium cuts, either on-site or to go, all within an intuitive and seamless service model.

To build an instantly recognizable, innovative restaurant concept that elevates the customer experience while maintaining operational efficiency. Uniting modernity, quality, and a warm atmosphere, we imagined Brut Butcher as a next-generation dining format that honors its legacy as a premium butchery, but one could scale effectively, setting a new standard for fast-casual butchery.

Altavia Pallas played an central role in designing, refining, and launching the Brut Butcher experience. Our contributions spanned multiple disciplines:

  • Strategic Concept Development: We worked closely with the Despi Group to craft a clear, scalable positioning strategy that differentiated Brut Butcher from traditional steakhouses and fast-food outlets.

 

  • Brand Identity & Retail Design: From naming to environmental storytelling, we ensured that every touchpoint—architecture, interior design, and customer journey—reinforced a seamless, premium experience.

 

  • Integrated Digital Experience: We introduced an intuitive tech-enabled ordering system that optimized service speed and customization, allowing customers to select their cut, preferred cooking style, and service option with ease.

 

  • Dynamic Service Model: Whether dining in with a casual, hands-on experience or opting for the butcher shop takeout model, customers engaged with the brand in multiple ways.

 

  • Holistic Customer Experience: Our team crafted every aspect of the in-store journey—from digital interactions to in-person touchpoints—ensuring an elevated yet efficient service model that reinforced customer satisfaction and repeat visits.
